Sustainability Initiatives

Your Sodexo Campus Dining Team is dedicated to sustainability.  We know we can all work together to make a positive impact right here at Colorado Mountain College - Steamboat Springs. In addition to the many initiatives we take on as a company, we have implemented the following programs specific to Colorado Mountain College - Steamboat Springs.

Waste Reduction Efforts

We have developed waste reduction programs following the EPA's Food Recovery Hierarchy:

Food Recover Certified

We work with the Campus Food Recovery Network by donating food that would otherwise go to waste to people in need in our community. Sodexo has donated over 3,500 pounds of food to two local non profit organizations.

Feed Animals

All pre-consumer food scraps from our kitchen are donated to a local pig farm to prevent being wasted. 

Xprss Nap Dispensers

Xprss Nap Dispensers save energy and waste.  The napkins are made of 100% recycled paper and the dispenser will encourage customers to take (and waste) fewer napkins. Energy is saved because less power is used to recycle paper products than to create them from virgin material.  

Industrial Uses

We take our used fryer oil and have it recycled into bio fuel that is used all across Colorado. 

APEX Dishwashing System

APEX combines technology and products designed to save water and energy, minimize the impact of products on the environment, and has a built-in method of measuring results. The APEX management approach uses a tablet PC and wireless technology to communicate with the system’s controller to download, process and analyze data to establish each foodservice operation’s “rack-to-guest ratio.” By monitoring and improving this ratio, the system helps reduce the amount of water and energy used at each facility, and improve total operational efficiency.


Recycling & Composting

All of our post consumer waste is recycled or sent out for composting. Please use the receptacles we have provided for you in our dining hall for both recyclable and compostable items.

Other Initiative

  • We hold "weigh the waste" and "waste display" events each semester in collaboration with campus Food Club and Students for Sustainability Club to raise awareness on issues of food wasted and how diners can make a difference through their dining choices. 
  • We are committed to the REAL FOOD CHALLENGE with the goal of reaching 20% of our food budget to meet RFC four "Real Food" criteria.
  • We serve local Steamboat Coffee and Team Company coffee in the Black Diamond Cafe.
  • We use compostable cups, disposable silverware, and napkins across our dining locations.
